Ingredients (Coffee Cake):
120 grams of butter (about 1/2 cup)
100 grams of sugar (about 1/2 cup)
2 eggs
140 grams of all-purpose flour (about 1 cup + 2 tablespoons)
3 grams of baking powder (about 3/4 teaspoon)
30 ml lukewarm milk (about 2 tablespoons)
6 grams of instant coffee (about 1 tablespoon)
Cake Pan Size:
20 x 10 x 6 cm (8 x 4 inch)
Baking Time:
40-45 minutes at 340°F (170°C) in a preheated oven
Prepare the Batter:
– In a large mixing bowl, add 120 grams of butter and 100 grams of sugar. Stir the mixture for 3-4 minutes until it becomes light and creamy.
– Add the eggs one at a time, mixing well after each addition.
– Sift together 140 grams of all-purpose flour and 3 grams of baking powder. Gradually add this to the butter mixture, mixing on a slow speed for about 20 seconds.
– In a separate bowl, dissolve 6 grams of instant coffee in 30 ml of lukewarm milk. Add this coffee mixture to the batter and mix on slow speed for another 20 seconds until well combined.
Bake the Cake:
– Preheat your oven to 340°F (170°C).
– Grease a cake pan (20 x 10 x 6 cm) or line it with parchment paper.
– Pour the batter into the prepared pan, spreading it evenly.
– Place the cake pan in the preheated oven and bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
Once the cake is baked, remove it from the oven and let it cool in the pan for a few minutes. Transfer the cake to a wire rack to cool completely before slicing.
