Bring five cloves of garlic and two cups of water to a boil with any dried or fresh herbs. I used fresh thyme and oregano in this video. Season with salt and pepper.
Reduce to a simmer for twenty minutes.
Stain out the solids and mush the garlic into the soup.
Enjoy like a delicate consume, or use as a soup base instead of stock. In the video I added cooked spinach.
